Spicy Peanut Noodles

Ingredients

for the noodles:

1 serving brown rice pad thai noodles, cooked al dente and rinsed (rinsing helps to prevent them from getting sticky)

sesame seeds

cilantro, roughly chopped

green onions, thinly sliced

juice of 1 fresh lime

sriracha

for the peanut sauce:

1/2 c peanut butter or almond butter

2 tsp tamari or liquid aminos or coconut aminos

1 garlic clove, pressed or minced

1/2 pinky size ginger, peeled and minced

juice of 1 fresh lime

1 tsp sriracha

water to thin

Method:

Simply assemble the noodles and toppings in a large bowl. For the peanut sauce, blend all of the peanut sauce ingredients in a high speed blender until smooth. Top the noodles with the sauce and dig in.
