Rainbow Salad

I’ve been finding more and more that the more ingredients you put into a salad, the better it turns out! It’s fun to experiment adding different cooked whole grains, steamed or roasted veggies, fruits, nuts and seeds, and fermented foods. Creating your own dressings saves money and ensures you are adding flavor to your salad consciously - without hydrogenated oils or excessive sugars.

Ingredients:

For the salad

  • 1 cup chopped red cabbage

  • 1 cup chopped dino kale

  • 1/2 an avocado, diced

  • 1/4 cup diced watermelon radish

  • 1/4 cup shredded carrot

  • 1/4 cup chickpeas

  • 1/2 one cucumber, sliced

  • 1 tablespoon raw sauerkraut

For the dressing

  1. 3 tablespoons raw tahini

  2. 1 tablespoon maple syrup

  3. juice of 1 lime

Prep Steps:

  1. Toss all salad ingredients in a large bowl

  2. For the dressing, simply add all ingredients to a small bowl and whisk with a fork, feel free to add salt and pepper

  3. add mixed dressing to salad and toss to coat evenly
